Sherry producers don’t get much more lauded than Gonzalez Byass, one of the oldest wineries in all of Spain and family-owned since 1835. Winemaker Antonio Flores was quite literally born in the bodega, in a room above the Rebollo cellar where the famed Tio Pepe sherries are matured. His father was winemaker before him, and his daughter is being primed to take over the reins next. This 12-year-old Amontillado is aged under flor yeast for four years before being aged oxidatively via the characteristic solera system for another eight years. The resulting wine is complex, with notes of hazelnut and oak refreshed by a balanced acidity and long, salty finish. Ideal with cured meats, tapas or seafood.
